Cashew Cream Cheese Frosting Ingredients

• 280 g (2 cups) raw cashews, soaked overnight
• 118 g (½ cup) coconut cream, full-fat
or substitute coconut kefir for added probiotics
• 120 g (1 cup) powdered sweetener
(monk fruit, erythritol, or xylitol)
• 112 g (½ cup) coconut oil, melted
• 2 teaspoons sea salt
• 2 probiotic capsules (opened and emptied)
• 10 ml (1–2 teaspoons) pure vanilla extract

Optional for extra tang:
• 1–2 tablespoons fresh lemon juice


How to Make Cashew Cream Cheese Frosting

1. Soak the Cashews

Place the cashews in a bowl and cover with filtered water. Allow them to soak overnight, or for at least 4–6 hours, until softened.

2. Drain and Prepare

Drain and rinse the soaked cashews, then add them to a high-speed blender or food processor.

3. Add the Remaining Ingredients

Add the coconut cream (or coconut kefir), powdered sweetener, melted coconut oil, sea salt, probiotics, vanilla extract, and optional lemon juice.

4. Blend Until Silky Smooth

Blend on high until the mixture becomes completely smooth, creamy, and luxurious. This may take several minutes.

Pause occasionally to scrape down the sides of the blender to ensure everything incorporates evenly.

5. Adjust the Consistency

If the frosting appears too thick during blending, add a little more melted coconut oil, one tablespoon at a time, until a smooth consistency is achieved.

6. Chill to Set

Transfer the frosting to an airtight container and refrigerate for 3–4 hours. This allows the coconut oil to firm slightly, creating the perfect texture for spreading or piping.

7. Store

Store in the refrigerator for up to two weeks, or freeze for up to three months.


Bloomery Baking Notes

If the frosting becomes too firm after refrigeration, simply allow it to sit at room temperature for 10–15 minutes, then stir gently until smooth again.

For the most beautiful finish on cakes and cupcakes, chilling the frosting briefly after blending creates a stable, perfectly spreadable texture.
