There’s something magical about the first week of December—the anticipation of Christmas, the cozy glow of twinkling lights, and the joy of family traditions. One of my favorite ways to celebrate this time of year is by baking Extra Spicy Keto & Paleo Gingerbread Cookies with my girls.

Yes, even they love the extra kick in these nostalgic Christmas cookies! I can hardly keep up with the demand—we’ve already gone through three batches since December 1st!"

Each year, we gather around the kitchen counter, rolling out dough and cutting it into playful shapes—gingerbread men, snowflakes, and stars. While the cookies bake, we sip warm tea and share stories, creating moments of connection that I know my daughters will treasure for years to come.

Perfectly spiced with cinnamon, cloves, nutmeg, and a bold kick of fresh ginger, these cookies are soft, chewy, and utterly delicious. The combination of molasses, almond butter, and a touch of arrowroot flour creates a texture that’s ideal for rolling, cutting, and decorating.

The Recipe

Here’s everything you need to recreate this festive tradition in your own home:

Dry Ingredients:

  • 1 3/4 cups (175 g) almond flour
  • 1/4 cup (30 g) coconut flour
  • 1/4 cup (30 g) arrowroot flour
  • 1/2 teaspoon xanthan gum (optional for structure)
  • 1 teaspoon baking soda 
  • 1 tablespoon( 8 g) ground cinnamon 
  • 1 tablespoon (6 g) ground ginger
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon sea salt

Wet Ingredients:

  • 2 tablespoons (12 g) fresh ginger, finely grated
  • 1/4 cup (55 g) grass-fed butter (or coconut oil, melted for paleo)
  • 1/4 cup (64 g) almond butter
  • 1/2 cup (100 g) keto brown sugar substitute
  • 1/4 cup (60 g) molasses
  • 1 large egg (50 g) or flax egg for vegan/paleo option
  • 1 teaspoon vanilla extract 

Optional Royal Icing:

  • 2 large egg whites (approximately 60 g total)
  • 1 3/4 - 2 cups monk fruit powdered sweetener (adjust for desired stiffness)
  • 1 1/2 teaspoons lemon juice or cream of tartar
  • 1/4 teaspoon vanilla extract (optional)

Instructions:

For the Cookies:

  1. Preheat the Oven:
    Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  2. Mix the Dry Ingredients:
    In a medium bowl, whisk together almond flour, coconut flour, arrowroot flour, xanthan gum, baking soda, cinnamon, ground ginger, cloves, nutmeg, black pepper, and salt. Set aside.

  3. Prepare the Wet Ingredients:
    In a large mixing bowl, whisk together melted coconut oil, almond butter, keto brown sugar substitute, molasses, egg, vanilla extract, and grated fresh ginger until smooth and fully combined.

  4. Combine Wet and Dry Ingredients:
    Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms. Let the dough rest for 5–10 minutes to allow the flours to absorb moisture. If the dough feels too sticky, refrigerate for 10–15 minutes.

  5. Roll & Shape:
    Roll the dough into 1-inch balls or flatten slightly for round cookies. Alternatively, roll out the dough between two sheets of parchment paper and use cookie cutters for festive shapes. Place on the prepared baking sheet.

  6. Bake:
    Bake for 10–12 minutes, or until the edges are lightly golden and the cookies are set. Allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Royal Icing:

  1. Prepare Egg Whites:

    • In a clean, grease-free bowl, add the egg whites and lemon juice (or cream of tartar).
  2. Beat the Egg Whites:

    • Using an electric mixer on medium speed, beat the egg whites until frothy.
  3. Incorporate Sweetener Gradually:

    • Reduce the mixer speed to low and gradually add 1 3/4 cups of monk fruit powdered sweetener. Increase speed to medium-high and beat until the mixture becomes glossy and forms soft peaks.
  4. Adjust Consistency:

    • For thicker, stiffer peaks (ideal for intricate piping), add more monk fruit sweetener, 1 tablespoon at a time, until desired stiffness is achieved.
    • For flooding or smoother icing, add a few drops of water to thin out the consistency.
  5. Add Vanilla Extract (Optional):

    • Mix in the vanilla extract on low speed, being careful not to overbeat.

Storage Tips:

  • Store cookies in an airtight container at room temperature for up to 5 days or in the refrigerator for up to 2 weeks.
  • Freeze for up to 3 months. Thaw and enjoy!
