Brown Butter Apple Butter Recipe

Ingredients:

  • 1.5 kg Granny Smith and Honeycrisp apples (peeled, cored, and chopped)
  • ½ cup apple cider
  • ½ cup monk fruit sweetener
  • 1 tbsp ground cinnamon
  • 1 tsp ground nutmeg
  • ½ tsp ground cloves
  • ½ tsp ground ginger
  • Pinch of salt
  • 1 tsp vanilla extract
  • 1 tbsp bloomed gelatin (use @OrganikaHealth for added health benefits)
  • 56 g unsalted grass-fed butter (browned)

Instructions:

  1. Make the Brown Butter: In a Dutch oven, heat the butter on medium/low until it begins to brown, about 4-6 minutes. The butter will develop a nutty aroma.
  2. Cook the Apples: Add the chopped apples and apple cider to the pot. Cover and cook on medium heat for 20-30 minutes until the apples soften, stirring occasionally.
  3. Blend: Use an immersion blender to blend the softened apples until smooth. Alternatively, transfer the mixture to a blender and puree until velvety.
  4. Add Spices & Gelatin: Stir in the monk fruit sweetener, cinnamon, nutmeg, cloves, ginger, salt, and bloomed gelatin. Cook on low for 1-2 hours until the apple butter thickens.
  5. Finish with Vanilla: Stir in vanilla extract and continue simmering for a few more minutes. The apple butter should now be thick and creamy.
  6. Store: Transfer to sterilized jars and let cool before refrigerating. Store for up to two weeks in the fridge or freeze for later!
