These Coconut-Crowned Carrot Cupcakes are a celebration of that renewal.

Moist, delicately spiced, and filled with the natural sweetness of garden carrots… each bite is crowned with a velvety cream—light, luscious, and kissed with coconut. A dessert both nourishing and elegant, created not just to be enjoyed… but to be shared.

✧The Recipe

Dry Ingredients

  • 155g (1½ cups) almond flour
  • 30g (¼ cup) coconut flour
  • 11g (1 tbsp) psyllium husk powder
  • 60g (¼ cup) flaxseed, finely ground
  • 55g (¼ cup) toasted coconut flakes
  • 150g (1½ cups) finely shredded carrots
  • 80g (½ cup) finely shredded apple
  • 152g (¾ cup) sweetener (monk fruit & erythritol blend) 
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp sea salt

Wet Ingredients

  • 4 free-range eggs (room temperature)
  • 118ml (½ cup) avocado oil
  • 30ml (2 tbsp) lemon juice
  • 1 tsp pure vanilla extract


✧ Dairy-Free Cashew Cream Cheese Frosting (Signature Bloomery Option)

  • 280g raw cashews (soaked overnight)
  • 118g full-fat coconut cream (or coconut kefir)
  • 120g powdered sweetener
  • 112g melted coconut oil
  • 2 tsp sea salt
  • 2 probiotic capsules
  • 1–2 tsp vanilla extract
  • Optional: fresh lemon juice for brightness

✧ Easy Cream Cheese Frosting (Classic Option)

  • 155g (1½ cups) powdered erythritol
  • 118g (½ cup) grass-fed butter, room temperature
  • 1 (8oz) cream cheese, room temperature
  • ¼ tsp sea salt
  • 1 tsp vanilla extract

Instructions

Step 1 — Cream the Base
In a stand mixer, beat the butter and sea salt until soft and creamy (1–2 minutes). Add the cream cheese and blend until smooth.

Step 2 — Add Sweetness
Gradually add the powdered sweetener in thirds, mixing on low speed and scraping the bowl as needed.

Step 3 — Whip Until Light
Add vanilla, then increase speed to medium and whip until light, fluffy, and silky (1–2 minutes).

Make Ahead Tip:
This frosting may be stored in the refrigerator for up to 2 days. Allow it to soften slightly before spreading.

  1. Preheat oven to 325°F (175°C) and line a muffin tray.
  2. In a large bowl, combine all dry ingredients.
  3. In a separate bowl, whisk together wet ingredients.
  4. Gently fold wet into dry until fully combined.
  5. Divide into liners and bake for 25–30 minutes.
  6. Allow to cool completely before frosting.

Finish each cupcake with a generous swirl of cream cheese frosting 
then gently crown with large coconut flakes for that soft, snow-kissed finish.

Serve alongside a delicate floral Earl Grey or a light rose-infused black tea.
