Salted Raw Collagen Glow Caramel – Recipe
You’ll find soaking tips, blending notes, storage guidance, and serving ideas — everything you need to make this caramel flawlessly every time.
Dry ingredients
• 280g (2 cups) raw cashews soaked overnight
• 210g (1 cup) powdered sweetener - monk fruit, erythritol, xylitol
• 100g (5-6) Medjool date
• 56g (½ cup) collagen grass-fed
• 2 teaspoons sea salt
Wet ingredients
18mL (½ cup) coconut oil melted
118mL (½ cup) coconut milk --- full fat in can
• 30g (2 tablespoons) blackstrap molasses
1 teaspoon pure vanilla extract
2 teaspoons caramel extract *optional
Instructions
- Soak the Cashews: Place raw cashews in warm water and soak for at least 6 hours, or overnight for best results. This step is essential for achieving a silky, creamy caramel texture.
- Prepare for Blending: Drain the soaked cashews and add them to a high-powered blender.
- Warm Liquids: Ensure the coconut milk is slightly warmed, and the coconut oil is completely melted — this allows the caramel to blend smoothly and evenly.
- Add the Sweetener: Add the powdered sweetener to the blender. Powdered sweetener is key to achieving a smooth caramel with no granular texture.
- Optional Glow Boost: Add collagen peptides if using. Collagen creates a beautiful sticky richness similar to traditional sugar caramel, while adding gentle protein and beauty-supporting benefits.
- Build Caramel Depth: Add the dates, a pinch of Himalayan sea salt, and a small amount of blackstrap molasses. These ingredients work together to create depth, warmth, and true caramel flavor.
- Finish with Flavor: Add pure vanilla extract and, if desired, a small amount of caramel extract to enhance the caramel notes.
- Blend Until Silky: Secure the lid and blend until completely smooth and glossy.The luxury of this caramel comes from patience in the blending process — allow it to blend fully until it pours like satin ribbons from a spoon.
- Store: Pour into an airtight container. Store in the refrigerator for up to 1 month, or freeze for up to 4 months.
